Kidfresh Micro Meals Make Dinner Easy! *Win up to 6 FREE Meals!*

With back to school in full force, the kids and I are constantly on the go. Finding room in our schedule for dinner can be pretty hard to do- especially on karate, Odyssey, boy scout, girl scout, and my college nights. Roll that all into a Tuesday or a Thursday, and I'm willing to bet someone is complaining they are hungry at 9pm bedtime.

I really do take pride in the fact that I feed my kids healthier food options as often as I can. Now, I'm not one of those overly healthy-nut-moms that never buy a cheeseburger on the go, or a TV dinner for Tuesday or Thursday nights every now and then. In fact, I've recently been introduced to KidFresh Meals, and have completely fallen in love!

Kid-friendly choices range from mac and cheese to pasta and meatballs and even quesadillas, Kidfresh meals have been developed by parents for their picky eaters, with the help of an award-winning chef and a pediatric nutritionist. These dishes - ready in 4 minutes - provide key nutrients for growing children, including up to 33% of a child's daily vegetable requirements through the addition of hidden vegetables. The meals come high in protein and vitamins, contain low sodium, and all for under 400 calories with great taste that kids love. With its line of 100% natural frozen meals for kids, Kidfresh offers a convenient way to feel good about mealtime without sacrificing taste or nutrition.

The best part is that these meals are located in the freezer section of my local Publix, so to get them I don't have to travel too far, or make a special trip. To find a store near you that carries Kidfresh meals, visit http://www.kidfresh.com/find-a-store/.

The kids loved it, it wasn't too strenuous on our wallet, and it was a heck of a lot healthier than our normal frozen entree, or canned concoctions. Even the hubster could handle dinner on those crazy, stressful nights. Score!

Kidfresh meals will definitely be a staple on our grocery list, at least for the rest of this semester. Be sure to follow Kidfresh on Twitter to stay up to date on new meals and special deals!

Great Deals on Great Meals at Publix! *Plus $25 GIVEAWAY!* ENDED

One of the most important moments of my day is dinner time. Sure, I like food, (and so does my family), but that's not the reason why. I'm an old school mom, that really likes having the time around the dinner table to connect with my family. Learning about each other's day, planning the weekend together, laughing about silly things- that's what helps make memories.

I am a crazy busy mom. I have a child with special needs who hasn't "officially" "officially" been diagnosed- (don't ask)- a pre-k, almost-kindergartener-going-on-15 princess-in-training, am part of the PTA, SAC, Policy Council, am a Team Mom for tee ball, and needless to say, am stretched in many different directions. Especially now with end of year meetings, time for me to plan and prepare a meal are limited, and it's times like this where I love my Publix even more.

The other day I was walking up the aisle mumbling groceries I had in my fridge over and over trying to come up with some sort of a concoction to call "dinner". I could make a carbonara-type sauce, and pair it with a meat, but we were totally done with chicken, and I just couldn't think. (Bri would have blamed it on the sun, or the heat from practice.) I opened my sales flyer and voila, there was a recipe for the most delicious looking pork. I knew right there that I had most of those ingredients (or so I thought) but if not, I could totally do a carbonara type sauce over it and call it a day. In moments I went from lolly-gagging through the aisles looking like a crazy person mumbling ingredients to herself, to a person on a mission. Pork was on sale, so with even more zest in my step, my meal plan was done.

What I love even more is that even if I can't figure out a meal- or if I don't resort to one of our 'staple' meals- I know I can always count on our Apron's booth for something tasty and usually quick. Thankfully, I have a family that loves trying new things. The best part is that it takes the "boring" factor out of dinner, because the family never knows what to expect. (Check out APRON'S here for more recipe ideas!)

So, if you've been following me on Facebook or Twitter you may have seen that recently I've begun couponing. No, it's not because of the crazy coupon show on TV- (remember, I don't have a ton of free time, people), it's because I just want to save money. I do not buy stuff I don't normally buy, unless it's insanely cheap, something that once sparked my interest as something I'd like to try, or free with my coupons. I mainly buy only the stuff I did before I started couponing. The only difference is that I'm saving a ton of money! Along with starting to use coupons, I started following the blog, AddictedToSaving.com. (I must say, if you live anywhere near a Publix, you should definitely be following that blog. You may not be a crazy couponer, or just looking to save a few, but how that site has helped me, you have NO idea!)

Four months ago, I thought that Publix had higher individual price points on items, which is why they could swing all of the crazy BOGO sales. Since following that blog, I've learned that their base price point is actually lower than many- if not all of their local competitors- on most items. I had no idea! I also learned that you can combine Publix coupons (you know the big coupon in the flyer or the bunch of coupons in the green and yellow advantage flyers that start with a PLU#.. OR the ones on the little kiosk thing floating around with savings on things like Yoplait, Cheerios, and more!) with manufacturer coupons (the coupons with a barcode), for even more of an incredible savings. I can officially say that for about 4-5 months, the majority of my grocery shopping is done at Publix because of these savings.

Now that we've settled into our new home a little bit better, our office is fully functioning and my son is almost '"officially" "officially"' diagnosed with something, I can start showing you all of the fabulous savings I'm raking in. Just a collection of random tid-bits gathered from online:

In 2007 a survey showed that 89% of the United States population used coupons to save approximately $2.6 billion dollars.

Manufacturers offered over $350 billion dollars in coupons that year – leaving over $347 billion dollars in coupons unredeemed.

The typical family saved 7% on their grocery bill in 2007 by using coupons – for a savings of $5.20-$9.60 per week. That may not sound like a lot, but with an average of $8 per week those savings add up to over $400 for the year- not bad for an average coupon user. Serious coupon users save much, much more, most of the time saving at least 75-85% of their bill.
To jump start you into saving money at Publix, check out GreatDealsOnGreatMeals.com to print out $10.80 in savings (the coupons expire on 5/29, so be sure to download them now)!!

Plus, through May 29th, stop by your local Publix to start your savings with a recipe for an easy Pasta Night at home! Make your own Pillsbury Ready to Bake! cookies for dessert, and stock up on some of the other featured products like Yoplait Yogurt, Honey Nut Cheerios and Progresso Soup!

Bob Evans and Publix team up to bring the classics home to your table!

Just in time for Thanksgiving, local Publix locations (and some other retailers, too!) have started carrying Bob Evans Side Dishes like Original Mashed Potatoes, Garlic Mashed Potatoes, and Mac & Cheese in the refrigerated foods section.

My husband is a beef and potato kind of guy, and an absolute "Homemade Mashed Potato Junkie". Seriously, he could eat mashed potatoes from scratch all day long. I love mashed potatoes too, but rarely did we have homemade mashed potatoes growing up, the instant kind was just quicker. When I first started cooking for my husband, Brian would call my 'fake' potatoes out every time I cooked them. I couldn't believe he could tell the difference. Shortly there-after, I was invited to his mothers house and enjoyed homemade mashed potatoes the way they're supposed to taste.

Years have passed since then, and I have converted to homemade potatoes all the way. The kids love it, and let's face it- it's healthier.

Recently, I was presented the opportunity to review the new line of Bob Evans refrigerated potatoes and Mac & Cheese. (We literally live 4 blocks from a Bob Evans, and many Mothers or Fathers Days meals have been there.) Needless to say, I jumped at the opportunity to try them. I knew that the original sides that are served in their restaurants are delicious, and my kids devour them, but would the packaged kind work? Would they be a healthier alternative than say the boxed competitors versions?? Would it be enough to feed my hungry family? I was excited to try them out, especially since now with kids of my own, I can relate to why my mom used boxed potatoes.

The new Bob Evans Mashed Potatoes come in 'Original' and 'Garlic'. We decided to play it safe, and try the Original potatoes first. The package is microwavable, and almost instantly you have the creamiest, fluffiest homemade mashed potatoes- (with only a few little lumps of real potatoes)- ready for your dining room table.

The ingredients on the label were all normal ingredients, words that I could pronounce, and the nutritional values were very impressive for a pre-packaged product. I was expecting the sodium to be sky high, and honestly- it wasn't. The amount of food in the container was great for the size of the container. It was really packed into it, not half empty like most store bought sides. My scavengers were satisfied with the quantity.

The Bob Evans Mac & Cheese was thicker, closer to real homemade Mac & Cheese. The kids are used to the store boxed brand, so at first they were a little hesitant, but as soon as we told them it was like the kind from Bob Evans, they went to town on it! They cleared their plates, and even asked for more!

Brian & I cook with a ton of garlic, so I must say that our personal favorites were the Bob Evans Garlic Mashed Potatoes. Seasoned perfectly, it wasn't overly "Ghhhhhhhharlicy" but very well flavored. I generally need my potatoes to be lump free, but the tiny bits that were left in it really made it feel, and taste like genuine homemade potatoes.
I am excited that more varieties of classic Bob Evans products are being added to our local Publix shelves, and cannot wait to give the other products (like the Cheddar Potatoes!) a try. I've noticed on the actual Bob Evans Website, they have family sized containers as well, which would be perfect for the holidays, or for a really hungry group.

If the thought of homemade potatoes are that intimidating, Bob Evans Mashed Potatoes are the next best thing to homemade. Look for Bob Evans Sides at your local grocery store, and ask for them by name if they do not carry them yet. Bob Evans quality foods are sure to complete any meal or tradition, and with more selections being added, all of this year's Thanksgiving sides could be complete- from Sweet Potatoes to Glazed Apples!

WANT IT??
Click here to SAVE $0.50 on any Bob Evans Refrigerated Side Dish! Use this link if you're interested in saving on other Bob Evans Products. Find a super market or store near you that carries Bob Evans, here.

Congratulations to our WINNERS!!

Please read the WINNERS POST for more information on how to claim your prize!

This giveaway is open to residents of the US and will end on November 21st, at 11:59pm EST. Two winners will be chosen at random using Random.org. Special thanks to Bob Evans for sponsoring this review and giveaway, and allowing our family and readers to try these yummy sides on them!
