Crunchy Chicken Nuggets:

Prep time: 15 Min
Cook time: 25 Min
Makes: 4 servings

Ingredients:
  • 2 cups Cheerios® cereal 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon pepper 
  • 1/4 cup milk 
  • 2 tablespoons honey 
  • 1 tablespoon mustard 
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces 
  • 2 tablespoons butter or margarine, melted 

Directions: Heat oven to 400°F. Spray with cooking spray or lightly grease 13x9-inch pan. Finely crush cereal. Stir together cereal, salt and pepper; set aside. In medium bowl, stir together milk, honey and mustard until blended. Dip chicken into milk mixture; coat with cereal mixture. Place chicken in pan; drizzle with melted butter. Bake 20 to 25 minutes or until crust is golden and chicken is no longer pink in center.

Chipotle Ranch Taco Salad

NGEDIENTS
6 corn tortillas, cut into thin strips
3/4 lb. lean ground beef
1/2 tsp. ground chipotle chili powder, divided
1 can (15.5 oz.) low sodium red kidney beans, rinsed and drained
1/2 cup Wish-Bone® Ranch Dressing, divided
8 cups torn romaine lettuce leaves
2 medium tomatoes, chopped
1/2 cup chopped red onion
1/2 cup shredded low fat cheddar cheese (about 2 oz.)

INSTRUCTIONS
Preheat oven to 400°F. Arrange tortilla strips on baking sheet. Bake until crisp, about 10 minutes. Reserve handful of tortillas for garnish.
Meanwhile, brown ground beef with 1/4 teaspoon chili powder in 12-inch nonstick skillet over medium-high heat. Remove skillet from heat, then stir in beans and 1/4 cup Wish-Bone® Ranch Dressing; set aside to cool.
Layer 3 cups lettuce, 1/3 of the tomato and onion and 1/2 of the beef mixture in trifle dish or deep glass bowl. Sprinkle with 1/2 of the tortilla strips and 1/2 of the cheese; repeat layers. Top with remaining 2 cups lettuce, remaining tomatoes, onion and cheese. Sprinkle with reserved tortilla strips.
Combine remaining 1/4 teaspoon chili powder with remaining 1/4 cup dressing and serve with salad

I love making Balboni Chicken for my family. Quick & easy & delicious! Boneless breasts of chicken smothered by a mixture of mayo, sour cream & parmesan cheese with thyme sprinkled on top!

Balboni Chicken

Preheat oven to 350 degrees. Put boneless chicken breast in glass baking dish. Combine 16 oz container of sour cream, 1/2 c mayo and 1/2 cup grated parmesan cheese. Spoon mixture over chicken and smooth. Sprinkle thyme all over the top. Bake for 50 minutes. Let sit for 5 minutes after removing from oven.
